1. From the Spanish, socarrar, meaning “to burn” or “to scorch.”

2. The caramelised rice on the bottom of the paella pan - crisp and slightly charred.

How does it work?

Booking is simple: pre-choose your paella and any extras for the menu and let me know via the enquiry form, or by text if you’d prefer. As your paella is all cooked in the same pan, you must select one flavour combination for your entire party.

Meet Marke

Marke has been cooking in Spain for decades, first learning to cook paella the traditional way in Barcelona in the 80s. He later lived and worked in Ibiza and since then, has cooked hundreds of paellas, all with an open heart over open fires. 

To Marke, the paella is a simple dish but it has to be right. The right rice, the right sofrito, the right method. And of course, el socarrat - that layer of rice on the bottom of the pan that sings as it crisps and caramelises towards the end of the cooking. What better name for a business centred around a passion for paella.
